For June — fresh fruits and vegetable month — Tracy chats with James Beard Award winning cookbook author and chef Cynthia Graubart who recently published two cookbooks using blueberries and strawberries. With both savory and sweet recipes (food and drink), Tracy and Cynthia talk about the simplicity of her recipes, the history of both fruits and how to enjoy these summer treats in a variety of ways.

What do safe, inclusive & sustainable food and beverage experiences look like to you?

A judgement free zone where you can obtain food that meets your needs.

Do you have an example of a situation that negatively effected you and/or other individuals or groups’ food and beverage experience?

Frequently a hotel breakfast at a conference is bread-based, and occasionally fruit. I always hate it when there’s not a protein available!

What do you wish people knew about what you do?

How much dedication it takes to do it.

What is a best practice you use/or have seen to create safe and inclusive F&B experiences?

I think the move to the bamboo recyclables is huge.

What is your favorite food and your favorite drink?

I love comfort food — of all kinds, so Mac and cheese might be it….And for a cocktail, it’s an old fashioned, an non-alcoholic, I drink my blueberry shrub all summer!
